Hi all
So bank holiday weekend is on us
I’m sooooo excited for a few days off, and plan on simply chilling
I will however, go for long walks, a run and make sure I exercise every day,
This is even more important to me this weekend, as I will, like you guys be having some treats
I love, love, love Easter eggs,
Only having 2 and won’t eat them all in one weekend
But that and going out with my friends
And having a wedding to attend
All means that this weekend eating and drinking a little differently to normal
I’m sure it will be the same for you guys too
But guess what, it doesn’t all have to be unhealthy
Make sure you only have 1 treat per day
Drink the less sugar alcoholic drinks
If you’re out for food, or having a barbecue, go NO carbs
This will compensate for the alcohol your drinking and the nibbles of Easter Eggs you have
Get out and walk, cycle, play with the kids
Not only is this all fun, and exercise
but also spending ‘happy’ time with family and friends is actually one of the biggest stress reducers
So it’s a win, win all around
Enjoy your time off, but also don’t go crazy, stay healthy in the meantime

These cookies are scrummy so make a big batch and stay away from the Easter eggs
Makes 1 dozen cookies
2/3 cup cocoa powder
1/4 cup almond butter
1/4 cup of Stevia
1/2 a cup of vanilla protein powder
1 egg
2 tbs unsweetened almond milk
1/2 tsp baking powder
1/2 tsp sea salt
Almond flakes
Preheat oven to 220 degrees and line a baking tray with grease proof paper.
Mix all the dry ingredients into a bowl, until combined well.
Slowly add the almond butter, egg and milk and mix until a thick doughy texture.
Using your hands, roll small cookie shapes and place on the tray.
Use almond flakes to make the crosses.
Bake in the oven for 12 minutes.
